Knife Care

Oiling:
To date, all of my knives sold have been in a carbon steel. Carbon steels require some care, mostly drying and oiling. I oil with one of the following:

  • Rem-Oil - a drying oil protectant.
  • WD-40 - simple, cheap, works.
  • Mineral oil - works fine, and is food safe!

Sharpening:
Most of my knives are convex grinds or micro-bevels on saber or flat grinds. Maintenance sharpening is most easily done with a strop setup. I use the JRE strop bat, which comes from JRE Industries with plenty of compound to keep you going for a long time. The strop bat has 4 sides, with 'coarse' black polishing compound on one side, followed by green, then pink, and finally a bare leather strop side. Run them in order and you will have insanely sharp edges, and with the black compound side, it's not hard to even sharpen out a small flat spot if you have a couple minutes.

Seriously excellent device, works amazingly well.

If you get beyond that, and need to hit a stone or sandpaper, I tend to prefer freehand convexing on a regular mounted coarse/fine double sides oxide stone. Followed by stropping :)
